I believe that the fruit can be represented by an RC circuit, and I would like to make the measurement in a known frequency. I can measure the ''Z'' and the phase shift in degrees.
I would like to extract the ''R'' and ''C''.

The negative sign for the phase is correct as the definition is "current delay from voltage". Since the current leads the voltage in this circuit, the "delay" is negative.

In a parallel rc circuit it is a positive phase angle. This showed a negative.
